Roaster's Notes

Boasting notes of spiced stewed fruits and marzipan with a buttery finish, this decaf is Christmas come early. Whilst great black, the Passiflora's strong body and initial fruity kick of acidity cuts through milk like Chris Rea through Christmas Eve traffic, making it the perfect option for a late night flat white.

Process

Sugar Cane Decaf

These Caturra, Colombia & Castillo coffee beans have been selected from various smallholder farmers in the Tolima region of Colombia via Cedro Alto.

Sugarcane ethyl acetate (E.A.) processing, commonly referred to as natural decaffeination, starts with a gentle decaffeination process with water steam and ethyl acetate (a natural side product from the sugar and wine fermentation) – to leave the high quality beans with a full flavour profile.

With the help of AGPROCEM initiative in Tolima, smallholders are able to focus on cup quality, lot separation capabilities and environmental conservation, many of the members being organic or fair-trade certified. Cedro Alto partners with AGPROCEM to segregate lots by profile and channel them to their ideal roasters and give farmers the best price possible, either as single farm microlots or as bespoke regional lots. Cedro Alto are at the forefront of championing indigenous Colombian coffee farmers rights in the specialty coffee market by providing both roasters, and perhaps more importantly the smallholders themselves, full traceability of their coffees on the global market..
