Background Information

In many ways, Decaf Rainbow celebrates the work of our exporting partner Azahar Coffee Company and highlights the efforts of their sourcing and quality teams.

An increasing demand for high-quality decaf led Azahar to create a blend based on achieving a consistent flavour profile.

Sourced across the breadth of their partner-producers whose coffee meets their quality requirements, all coffees undergo the same traditional washed process where beans are depulped, fermented in tanks for 12-24 hours, and then dried in a two-stage process, initially on raised beds for 10-15 days before finishing drying in a mechanical dryer.

Coffees are then transported to Descafecol, a now famous factory in the Caldas district of Colombia on the vanguard of the decaffeination process. Sometimes called "Sugarcane Process", the coffee is decaffeinated using ethyl acetate which is derived from sugar cane, blackberries, beets, or sometimes grapes and used as a solvent to extract caffeine from the beans.
