Deep cocoa body and a stupefying berry acidity, the Ilama excels on filter and sings on espresso.
The Ilama is a collaboration between multiple producers from the Santa Barbara Region between Lake Yojoa and the Santa Barbara Mountain. Long term members of Club Garage might remember we’ve had a number of excellent coffees from this region and the Ilama is certainly no exception.
This particular coffee is the result of a partnership project between our friends at LCM and Beneficio San Vicente, the mill and exporter in Santa Barbara, in order to incentivise farmers to transition from commercial to speciality production.
LCM and Beneficio San Vincente offer producers a premium price and support them to ensure the greater diligence and care in harvesting and processing to promote not only a greater quality of coffee but also a healthier ecosystem whilst also ensuring that the coffee is always fully traceable back to the producer.
